Well, that’s it. My undergraduate career is over. Last week I graduated from The University of Arizona and it still hasn’t fully sunk in that I won’t be going back to school in August. Or that it will be a long time before I have to write another 10 page paper. Or that I won’t ever see some of my classmates again. Graduating is bittersweet. On one hand, graduating from college is a great accomplishment and provides a rush of excitement about the future. On the other hand, it is completely terrifying because school has been a huge part of my life for the last 16 years.
While trying to come to terms with the fact that I’m an adult now (wait, am I?) I have been enjoying the first few days of summer and relaxing for the first time in a while. Summer (and the majority of the year to be honest) always consists of a lot of smoothies for me. My smoothie trick, which probably isn’t a trick at all, is replacing ice with frozen fruit. It prevents the smoothie from being watery and makes it, well, smooth.
This smoothie is packed with the most refreshing, summery ingredients. The base of the smoothie is freshly blended watermelon juice. From there I add frozen peaches, frozen mango, and fresh strawberries and blend everything until I have the perfect summer smoothie. It’s great for bridal showers, baby showers, after a sweaty workout, for tequila, lounging by the pool, for tequila and lounging by the pool… the possibilities are endless. - 1-3/4 Cups cold watermelon juice
- ½ Cup frozen peaches
- ½ Cup frozen mangos
- 4 Large strawberries
- To make the watermelon juice:
- Blend the flesh of ¼ of a watermelon until it is smooth. This will make more than you will need for the smoothie, but it can be saved for later. Refrigerate the juice until it is cold.
- To make the smoothie:
- Add all ingredients to the blender and blend until smooth.
