I always forget just how awful Arizona summers are until the 100+ degree temperatures and merciless sun remind me. While kids in most cities around the US can be seen frolicking in the streets on a normal summer day, the streets here are reminiscent of ghost towns. Around 7p.m. people slowly begin to trickle out of their houses in hopes of enjoying the last bit of sunlight without the threat of sunburn. But hey, it’s a dry heat.
So what do we do to survive the sweltering heat?
- Drink water
- Swim (if you ever fly over Phoenix, notice that almost every backyard has a swimming pool)
- Stay inside
- Drink copious amounts of delicious smoothies
You should also avoid having a black car with black interior, but hey, I don’t always make the best decisions. But back to the important thing: SMOOTHIES. In particular, this blueberry coconut smoothie. Blueberry+coconut is a combination made on a tropical island where you get to lay on the beach all day and never worry about a thing. Or, um, in heaven. So obviously I had to bring the joy of their unity to a cold, filling smoothie that I can sip from the comfort of my air-conditioned house.
One of the best things about this smoothie is that it’s nutritious and filling enough to be a meal. It has blueberries (duh), which are fibrous and juicy, almond butter, which contains healthy fats and protein, filling rolled oats, and ever-worshiped chia seeds. These ingredients, plus banana, unsweetened almond milk, and unsweetened dried coconut come together in perfect harmony. I don’t know about you, but I never complain about a delicious and healthy meal/snack that I can make in less than five minutes.
- 1 Cup Frozen Blueberries
- 1 Tablespoon almond butter
- ⅔ Cup unsweetened almond milk
- 1-2 Tablespoons unsweetened dried coconut
- ½ Tablespoon chia seeds
- 1 Tablespoons rolled oats (gluten free if desired)
- 1 Banana
- Add all ingredients to a high-speed blender and blend until smooth.
