Banana bread granola is my new favorite way to use ripe bananas. It's sweet, soft, and slightly sticky, making it perfect for breakfast, on the go snacks, and even dessert.
Serves: 9
  • 1 really ripe banana
  • ½ cup coconut oil, melted
  • ½ cup brown rice syrup or maple syrup
  • ½ teaspoon pumpkin pie spice
  • 1 teaspoon vanilla
  • 4.5 cups rolled oats
  • 1 teaspoon salt
  • 1.5 cups chopped walnuts
  • 1.5 cups chopped dried bananas, optional
  1. Heat the oven to 350 degrees.
  2. Blend banana, coconut oil, brown rice syrup, pumpkin pie spice, and vanilla in a blender until the mixture is smooth.
  3. Put oats, salt, and walnuts in a large mixing bowl and stir them together. Pour the blended wet ingredients into the bowl of dry ingredients and stir until everything is evenly combined.
  4. Pour the mixture onto a baking sheet.
  5. Bake the granola for 15 minutes.
  6. Remove the granola from the oven and stir it.
  7. Bake the granola for another 15 minutes.
  8. Allow the granola to cool for one hour before breaking it up and storing it in an airtight container.
